how do you make soft centred chewy biscotti?
In some Italian coffee shops in Sydney you can buy soft-centred (chewy) "biscotti" with a crisp outer layer. Not for Dunking they are chewy and delicious. The best ones are pistachio. They are gluten-free and i think they contain almond meal. Does anyone have a recipe for this (they are usually round not sliced.
The whole thing about biscotti is that they are baked twice: once in the log shape, and once after they've been sliced. That's the process that makes them so crunchy. So if you baked them only once they'd retain the internal moisture and still be crisp on the outside.
