How would you express "because [something], I did/did not [some action]"?
For example,
"Because I was sick, I did not go to school"
may I write: "저는 때문에 아팠어요. 학교에 안 갔어요."
(this is just an example, it is not from my personal life. I am in a korean language class right now, but it is moving a little slower than my curiosity)
Do I have to put them in two sentences to write naturally?

you can say something along the lines of:
아팠기 때문에 학교 안 갔어요.or
아파서 학교 안 갔어요
there are certain linking phrases you can use. you dont have to separate it into two sentences. and by the way... your two sentences arent exactly correct. 저는 때문에 아팠어요 doesnt make sense
